Upcoming Southern Beef and Lamb School in Wagga Wagga
The Southern Beef and Lamb School is set to take place in Wagga Wagga from February 17 to February 19, 2026. This 2.5-day event is designed for cattle and sheep producers seeking to enhance their knowledge on various critical areas, including genetics, nutrition, markets, pasture performance, and informed business decision-making.

This year’s Southern Beef and Lamb School aims to accommodate approximately 150 producers and advisors. The program will feature a blend of lectures and hands-on workshops, ensuring that each presentation offers practical insights and tools that can be implemented directly into their business operations.

Event Schedule Overview
The event schedule is designed to maximize learning and networking opportunities:
- Day 1 (February 17): Kick-starts the program with sessions on international market opportunities and value creation in domestic beef and lamb markets. Participants will join practical workshops and CSU sheep and cattle feedlot tours, culminating in an evening networking dinner.
- Day 2 (February 18): Focuses on improving business operations, addressing decision-making amidst volatility, and incorporates sessions on sustainable beef practices. Afternoon workshops will allow participants to delve into pasture management and risk management techniques.
- Day 3 (February 19): Concludes with deep dives into meat quality compliance, livestock transport preparation, and insights into the future of meat science technologies. Participants can engage in workshops highlighting the significance of healthy offal for overall carcase outcomes.
All meals, including morning tea and lunch, are provided during the event.
