A Memorable Start in Reykjavik
Our journey began in Reykjavik, where we met our gracious hosts from Business Iceland, Björgvin Þór Björgvinsson and Alisa Silveira. Over a delicious meal of Plokkfiskur, a traditional fish stew, at the Hotel Reykjavik Marina’s Slippbarinn restaurant, we reminisced about past experiences in Iceland and expressed our excitement for the adventure that lay ahead.
Visiting Innovative Salmon Farming in Þórlákshöfn
The next day, we journeyed south to Þórlákshöfn, where we explored First Water, a groundbreaking land-based salmon farming facility. Our knowledgeable guide, Ómar Grétarsson, provided an enlightening tour that showcased the facility’s state-of-the-art technology and practices.
Embarking to Heimaey
Following our visit, we prepared to board the ferry to Heimaey, the largest island in the Westman archipelago. Unfortunately, the weather had other plans, calling for a temporary pause before our crossing. After our tour, we explored the Eldheimar Museum, where we learned about the dramatic eruption of the Eldfell volcano in 1973 that reshaped the town’s landscape.

Lunch brought us to Gott, where Frosti introduced us to renowned chef Gísli Matt. Together, we foraged seaweed and herbs, which would later complement the dishes at Gísli’s restaurant, further showcasing the fresh, local ingredients.
A Day of Learning and Adventure
The afternoon was filled with visits to the Fab Lab and the Beluga Sanctuary. We concluded our day with a climb up Eldfell volcano, where the breathtaking views met with challenging winds.

Dinner at Gísli’s acclaimed restaurant, Slippurinn, introduced us to a unique 9-course tasting menu featuring local delicacies. The culinary innovation left us in awe, enriching our understanding of Icelandic gastronomy.

As our trip drew to a close, we shared one last meal at Næs, another of Gísli’s wonderful restaurants. The views and stories of Vestmannaeyjar’s rich culture lingered in our hearts. We said goodbye to our friend Frosti and boarded the ferry back, reflecting on our incredible experiences on the islands.
A Delicious Farewell
On our way back to Reykjavik, we relished a final dinner at Fjöruborðið, enjoying a feast of langoustine soup and garlic butter sautéed tails, capped off with dessert, due to the irresistible temptation of Icelandic carrot cake and meringue.
