
New Scholarship Honors Poultry Science Pioneer Craig Coon
A momentous occasion unfolded in September when former students of Craig Coon, a distinguished faculty member and researcher, gathered to celebrate the establishment of the “Craig Coon Endowed Graduate Scholarship.” This scholarship is dedicated to supporting graduate students specializing in poultry science, specifically in breeder nutrition.
Impactful Contributions Recognized
The announcement ceremony was attended by notable former students including Milan Hruby, Justina Caldas, Antonio Beitia, Katie Hilton, and Kori Leske, along with Marc de Beer and Ricardo Ekmay. Hruby, the vice president of creation design and development at ADM Animal Nutrition, spoke of Coon’s enduring impact: “We’re here to honor a remarkable individual whose contributions to science, education, and mentorship have left a lasting legacy.”
Caldas added, “Beyond the publications and discoveries, what we remember most is the way Dr. Coon invested in people.” She emphasized how he challenged them to think critically and provided support during challenging times.
A Lasting Legacy at U of A
Coon has been a devoted member of the University of Arkansas’ Dale Bumpers College of Agricultural, Food and Life Sciences for 28 years, contributing over 52 years to education and research. “I have been truly blessed for having had the opportunity to work with such great people during my career,” he reflected, humbled at receiving such an honor.
The newly established scholarship aims to assist graduate students who are focusing on poultry science, particularly breeder nutrition, with a significant pledge of $50,000 already amassed.

“Dr. Coon has provided us with unwavering support, great mentorship, and inspiration to reach our goals in life,” remarked Beitia, now a poultry nutritionist at Aviagen. Hilton, a technical service manager with IFF, also highlighted how Coon influenced their lives beyond academics: “You’ve not only guided our academic paths but also touched our lives in ways that go far beyond the classroom.”
Other alumni involved in the scholarship initiative include Marc de Beer, Bumpers College’s 2025 Outstanding Alumnus of the Year, and Ricardo Ekmay, the Outstanding Young Alumnus for 2023. Both owe their academic journeys to Coon’s mentorship.
Coon’s Academic Achievements
Throughout his career, Coon has mentored over 40 graduate students and advised 26 post-docs and visiting scholars. He has developed and taught 10 courses and published extensively, with 163 refereed journal articles, 66 of which are specifically in poultry science.
David Caldwell, head of the Department of Poultry Science, remarked, “Dr. Coon has mentored and trained an outstanding number of graduate students throughout his lengthy career. This scholarship is unique because it specifically supports graduate students focused on breeder nutrition in poultry.”
A Journey Rooted in Passion
Coon’s academic journey began at Texas A&M University, with a bachelor’s degree in animal science, followed by a master’s degree in plant biochemistry and physiology. He earned his Ph.D. in biochemistry and biophysics in 1973, with a notable two-year service in the Vietnam War as a Marine.
He began his teaching career at the University of Maryland in 1973, later teaching at Washington State University and the University of Minnesota, before settling at the University of Arkansas in 1997.
