The Fish Works, a chippy based in Largs, has reason to celebrate after being crowned the winner of the prestigious Field to Frier category at the National Fish & Chip Awards. The ceremony, held in London, was hosted by renowned TV presenter and actor Stephen Mangan.

The Field to Frier category is dedicated to recognizing exceptional skills in potato sourcing, preparation, storage, and frying. It aims to honor establishments that show meticulous care at every stage of chip production, transforming a humble ingredient into a beloved national dish.
Since 1988, the National Fish & Chip Awards have been celebrating excellence in the industry, offering a competitive environment that challenges participants through a rigorous multi-step assessment process, including interviews, tasks, and mystery visits.
An Outstanding Competition
In a tight contest against formidable finalists such as Linfords Traditional Fish and Chips from Market Deeping and Garioch Fish Bar in Inverurie, The Fish Works emerged victorious. This success is attributed to years of dedication towards refining their operations and acting on feedback from previous competitions.
Innovation at Work
A pivotal factor in their win was the installation of a state-of-the-art, on-site potato preparation facility dubbed the ‘Potato Works.’ This innovation streamlines the chipping process and allows customers to witness the transformation from potato to chip firsthand. Local schoolchildren have even participated in educational trips, gaining insight into sourcing and preparing food.
Tiffany Irvin, co-owner of The Fish Works with her husband Ross, shared her excitement: “Winning the Field to Frier award is incredibly special for everyone at The Fish Works. We take immense pride in understanding every step of what makes a great chip.”

Irvin went on to emphasize the importance of their new potato preparation unit, stating, “This facility allows us to showcase the entire journey from field to fryer, giving our customers genuine insight into the craft behind our work.”

Future Opportunities Await
The accolades continue as The Fish Works, along with other award winners, has been invited on an exclusive study trip to Norway. Hosted on the long-liner vessel Geir, the trip will offer insights into responsible seafood sourcing and sustainability practices.
