Fox emphasizes the appeal of mushrooms and minimally processed options, a trend gaining traction in the food market.
“When we engage consumers, we don’t label our products as vegan or plant-based meat,” Fox explains. “Instead, we offer delicious, reasonably priced mushroom products that highlight the health benefits of shiitake mushrooms.”
Consumer Response: A Test in Naming
Fox shares an intriguing case study from a Mexican restaurant in Australia. The restaurant tested various names for their shiitake mushroom dish over six months and discovered a significant difference in sales. The products labeled with “pulled shiitake” outperformed those with ‘beef’ in quotations. “This stark contrast in sales illustrates that consumers prefer clear, authentic labeling,” he adds.
Expanding Horizons: Quick Service and Meal Kits
Fable’s shiitake products are becoming popular in quick service restaurant chains and meal kits across several countries, including Australia, the US, Canada, the UK, and Singapore. “Mexican cuisine is performing exceptionally well for us, but our products also shine in salads, burgers, and Asian dishes,” Fox notes.

“Unlike many other food service companies that use simple diced mushrooms, our shiitake infusion provides a unique flavor profile and retains volume during cooking,” adds Fox. “Our method prevents moisture loss, delivering a tastier and more economical option for consumers.”

With one in three Americans wanting to cut back on meat consumption, Fable aims to align with their preferences without pushing meat substitutes. “We want to simplify the process of reducing meat intake, making it convenient and enjoyable,” Fox explains. Their shiitake infusion product combines mushrooms with ground beef, creating a delightful blend suitable for various culinary applications.

Cost Efficiency and Production Innovations
Fable’s production method is notably cost-effective compared to competitors utilizing specialized bioreactors. The shiitake infusion product uses regular beef processors, making integration seamless.
The company is also exploring cultivating its own shiitake mushrooms. “We plan to optimize our cultivation process to reduce costs significantly and increase efficiency,” Fox states, predicting potential cost reductions of up to 90% in the long term.
Financial Stability and Future Goals
Having raised $14.5 million, Fable Food retains $3.5 million in reserves, positioning it for financial stability and growth. “By operating prudently, we’re on track to be cash flow positive next year,” Fox shares. They intend to pursue a smaller funding round while planning for a Series B round in two years, contingent upon continued growth and profitability.
